Domaine Jean-Marc et Hugues Pavelot

The Pavelot family has a long viticultural history in the village of Savigny lès Beaune, with ancestors tracked back to a winegrower named Claude Pavelot in 1700. The modern foundation of the domaine began with Henri Alfred Pavelot, who lived from 1872 to 1949 and expanded the family vineyard holdings while initiating estate bottling. Jean Marc Pavelot increased the international visibility of the estate during the 1980s. Today, his son Hugues Pavelot manages the winery alongside his brother Pierre Yves, having officially joined the winemaking operations in 1997.

The estate manages 17 hectares of vineyards, with approximately 15.5 hectares located within the Savigny lès Beaune appellation. Additional parcels are situated in Beaune, Aloxe Corton, and Corton. The domaine recently increased its holdings by three hectares in 2021 through the acquisition of vines from Domaine Écard. Viticulture follows organic principles, with the estate achieving organic certification for its recent vintages. In the cellar, the winemaking team typically destems 80 to 100 percent of the fruit, though some premier crus may include a small portion of whole clusters. Fermentation relies on ambient yeasts and aging occurs in oak barrels with a conservative use of new wood to maintain fruit freshness.

This producer is best known for its extensive range of premier cru wines from Savigny lès Beaune, with the La Dominode vineyard serving as its flagship bottling. Other significant premier cru holdings include Aux Gravains, Aux Guettes, and Les Lavières. The estate has earned a reputation for producing wines that emphasize silky tannins and age worthiness while remaining more accessible in price than many neighboring Burgundy appellations. Critics often recognize the domaine as a primary reference for the Savigny lès Beaune region due to its consistent focus on terroir expression and structural balance.
