Domaine Jean-Louis Chavy

The Chavy family has been established in Puligny-Montrachet since 1820, representing six generations of viticulture in the Côte de Beaune. Although the family has a long history of grape growing and selling fruit to négociants, estate bottling only began in 1986 under Gérard Chavy. Following Gérard’s retirement in 2002, the family holdings were divided between his two sons, Alain and Jean-Louis. Jean-Louis Chavy founded his independent domaine that year and completed the construction of a temperature-controlled winery in the village in 2004. His son, Paul Chavy, joined the estate in 2020 after completing oenological studies and gaining professional experience in other wine regions.

The domaine manages approximately seven hectares of vineyards, almost exclusively planted with Chardonnay on classic clay-limestone soils. The holdings include several premier cru parcels in Puligny-Montrachet such as Les Folatières, Les Perrières, Les Clavoillons, and Les Champs-Gains. These vines range in age from 20 to over 60 years, with some specific plots like Les Folatières requiring careful management due to soil erosion on steep gradients. In the cellar, the winemaking process involves whole bunch pressing and fermentation with natural yeasts. Aging takes place in 350-liter barrels for up to 16 months, with new oak usage typically restricted to 15 percent for village wines and 25 to 30 percent for premier crus to maintain transparency of the site.

Domaine Jean-Louis Chavy is recognized for a style that emphasizes precision, tension, and clear mineral expression rather than heavy oak influence. The flagship offerings include the village-level Puligny-Montrachet, sourced from ten separate parcels, and the individual premier cru bottlings which are frequently cited for their elegance and aging potential. Since 2020, the estate has expanded its portfolio through a négoce business established by Paul Chavy. This venture allows the family to offer wines from a broader range of Côte de Beaune appellations, including Saint-Aubin, Saint-Romain, and Corton-Charlemagne. This expansion has diversified the range while the core of the business remains rooted in their ancestral holdings in Puligny-Montrachet.
