The cooperative was established in 1950 near the village of Veyre-Monton under the name Cave des Coteaux. It later adopted the name Cave Saint-Verny to honor the patron saint of local winegrowers, whose cult in the region dates back to the 17th century. Situated along the 45th parallel, the winery underwent a significant financial rescue in 1991 when the agricultural seed company Limagrain provided investment to prevent its dissolution. In 2017, the operation merged with the Desprat family business, a wholesale company dating back to 1885. Pierre Desprat currently manages the enterprise alongside his daughters, Léa and Lucie, who represent the fifth generation of the family involved in the Auvergne wine trade.
The vineyards span roughly 180 hectares along the Chaîne des Puys, a volcanic range in the Massif Central that is recognized as a UNESCO World Heritage site. These plots sit on complex geological formations consisting of basalt, lava, and ash deposits. The growers follow sustainable or organic farming methods across 53 communes, ranging from Riom in the north to Issoire in the south. In 1993, the facility was modernized with temperature controlled stainless steel tanks to replace older concrete vessels. Current winemaking is directed by Karine Scudier and oenologist Olivier Mignard, who emphasize a minimalist approach in the cellar to preserve the mineral character derived from the volcanic soils.
Cave Saint-Verny is the only cooperative remaining in the Puy-de-Dôme and produces about half of the wine in the Côtes d'Auvergne appellation. The portfolio is centered on Pinot Noir, Gamay, and Chardonnay, with the red wines often displaying a peppery or smoky quality attributed to the basaltic terroir. The winery was instrumental in the region gaining its own AOC status in 2011, having previously been treated as a peripheral part of the Loire Valley. Its wines are now frequently categorized by their volcanic origins, with labels such as the Eruption and Magma series designed to highlight the specific impact of ash and lava on the flavor profile of the local grapes.
