Domaine Bernard Defaix

Bernard Defaix founded the estate in 1959, starting with just two hectares of land. Though he descended from a lineage of vine growers dating back four generations, he was the first in his family to focus on estate bottling. During the early years, Bernard was instrumental in developing a method to protect vineyards against spring frost, which allowed for more stable harvests and the development of commercial markets. The domaine is currently managed by his two sons, Didier and Sylvain Defaix. Didier is responsible for vineyard management and general administration, while Sylvain directs the winemaking and cellar operations. Hélène Jaeger-Defaix, Didier’s wife, manages the commercial side and also oversees her own family estate in Rully.

The estate encompasses approximately 27 hectares of vines, primarily situated on the left bank of the Serein River. Holdings include significant parcels in the Premier Cru vineyards of Côte de Lechet, Vaillons, and Lys, alongside plots in Petit Chablis and village level Chablis. The family transitioned to organic viticulture in 2009 and achieved official Ecocert certification in 2012. Soils consist of traditional Kimmeridgian limestone and clay, often containing fossilized oyster shells known as Exogyra virgula. Winemaking emphasizes freshness and site specificity, with most fermentations occurring in temperature-controlled stainless steel using indigenous yeasts. For old-vine cuvées and Grand Cru selections, they use neutral oak barrels and extended lees aging to provide additional texture without masking the fruit.

The domaine is most recognized for its Chablis Premier Cru Côte de Lechet, where it remains the largest landholder with eight hectares. This site produces a flagship wine known for its distinct saline character and mineral precision. Other offerings include the Premier Cru Les Vaillons and the Côte de Lechet Réserve, which is produced from vines planted in 1955. While the majority of the production comes from estate vineyards, they also produce a Grand Cru Bougros through a merchant operation. The producer maintains a reputation for crafting transparent wines that avoid excessive wood influence. Their commitment to organic practices and consistent quality has made them a benchmark for independent producers in the Chablis region.
