The Amiot family has a history in Morey-Saint-Denis that spans ten generations, with roots in the village dating back to the early 18th century. For much of this history, the family operated as grape growers, selling their harvest to major négociant houses in Beaune such as Joseph Drouhin. The estate established its independent identity in 1976 when Pierre Amiot began bottling and labeling wines under the family name. Management passed to Pierre’s sons, Jean-Louis and Didier, in the 1980s and 1990s. In 2020, a restructuring occurred when the two brothers decided to split the family holdings. Jean-Louis Amiot remained at the original estate, joined by his son Léon, and they now operate under the updated name Domaine Amiot et Fils.
The domaine currently oversees five hectares of vines situated between Gevrey-Chambertin and Chambolle-Musigny, with the majority of holdings located in Morey-Saint-Denis. These vineyards sit at elevations between 220 and 260 meters on limestone and clay-marl soils from the Middle Jurassic period. Viticultural practices follow a sustainable model with High Environmental Value certification, incorporating techniques such as Guyot-Poussard pruning to maintain sap flow and regular ploughing to manage the soil. Winemaking remains traditional, involving hand-harvesting, manual sorting, and the use of indigenous yeasts for fermentation. The red wines age for 15 to 18 months in French oak barrels, using approximately 30 percent new oak for Premier Crus and up to 50 percent for the Grand Crus to preserve the typicity of each parcel.
The signature wines of the estate include the Grand Crus Clos de la Roche and Clos Saint-Denis, which are known for their power and aromatic complexity. The family also manages several significant Premier Cru plots in Morey-Saint-Denis, including Les Ruchots, Les Millandes, and Les Faconnières, as well as Les Combottes in Gevrey-Chambertin. While the portfolio is dominated by Pinot Noir, a small amount of Chardonnay is grown for a white Morey-Saint-Denis. The wines are characterized by their structure and mineral core, often showing notes of red fruit that evolve with age. The estate maintains a reputation for producing classic Burgundy that emphasizes the unique geological profile of individual sites, with about half of the total production sold to international markets.
