The Defaix family tracks its viticultural history in Chablis back to 1610, making it one of the oldest winegrowing domaines in the region. Daniel-Étienne Defaix represents the fourteenth generation of winemakers in his family and is the current head of the estate. He took over the domaine from his father in 1978 when he was an eighteen-year-old student, acquiring the Les Lys vineyard simultaneously to expand the family holdings. Today, he manages the property alongside his son, Paul-Étienne Defaix, who has taken on primary responsibilities in the vineyards and cellar after training in Beaune and working in Gevrey-Chambertin.
The estate manages approximately 28 to 30 hectares of vineyards situated on Kimmeridgian limestone soils. These holdings include the Premier Crus of Vaillon, Côte de Léchet, and Les Lys, along with small parcels in the Blanchot and Grenouilles Grand Crus. Many of the vines are quite old, with some parcels exceeding 100 years in age. The winemaking style involves a complete avoidance of oak barrels and a reliance on indigenous yeasts. Grapes are harvested mechanically to ensure precise timing, a choice made after decades of trials showed it provided better results than hand-picking. Fermentations occur at cool temperatures to preserve glycerol, and malolactic fermentation is allowed to finish naturally without intervention.
This producer follows a distinct strategy of extended aging and late commercial release. While most producers bottle their wines quickly, Defaix keeps his Premier and Grand Cru wines on their fine lees in stainless steel tanks for between eight and fifteen years. This prolonged period of yeast autolysis and regular lees stirring for the first two years results in a textural profile characterized by notes of honey, toasted nuts, and brioche. These wines are typically released only when they have reached a window of maturity, offering an alternative to the tart and youthful styles common in the region. This approach has led to the estate's wines being featured in many gastronomic restaurants globally.
