The estate was established in 1894 by Eugène Savès, an agricultural engineer who settled in the village of Bouzy. He began the winery after his marriage to Anaïs Jolicoeur, the daughter of a local winegrower. The house has remained under family control through four generations, transitioning from Eugène to Louis and then Camille Savès. Currently, the domaine is directed by Hervé Savès, who took over management in 1982. He operates the estate alongside his wife Nathalie and their son Arthur, maintaining the tradition of independent production in the heart of the Montagne de Reims.
The family manages approximately 10 hectares of vines with an average age of 35 years. Their holdings are concentrated in the Grand Cru villages of Bouzy, Ambonnay, and Tours-sur-Marne, supplemented by Premier Cru parcels in Tauxières. The vineyards are planted primarily with Pinot Noir, benefiting from south facing exposure and deep chalk subsoils covered with a layer of alluvium. Viticulture follows sustainable practices, and the estate has achieved High Environmental Value certification. In the cellar, Hervé Savès avoids malolactic fermentation for most wines to preserve the natural acidity and aromatic precision of the fruit. Fermentation occurs in thermoregulated stainless steel or enamel lined tanks, while some specific cuvées are vinified in oak barrels to introduce additional structure and complexity.
Camille Savès is identified as a prominent Récoltant-Manipulant, meaning the family grows all the grapes used in their production. Their lineup is led by the Carte Blanche and the Grand Cru Carte d'Or, which demonstrate the vinous character of Bouzy Pinot Noir. The estate is also recognized for its Brut Rosé, a blend that utilizes a small percentage of Bouzy Rouge still red wine. Other notable offerings include the vintage Millésime and the prestige Cuvée Anaïs Jolicoeur. All bottles are aged for a minimum of four years in deep limestone cellars, ensuring that the wines reach full maturity before they are disgorged and released to the market.
